Job Title: Executive Chef
Job Duties: Participate in the planning and costing of menus. Develop and write standard recipes. Develop new dishes and products. Ensure that outstanding culinary technical skills are maintained. Assist with organizing special events and special food promotions. Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustment to kitchen operations accordingly. Maintain a hygienic kitchen. Clean the kitchen and equipment. Maintain personal hygiene. Supervise and train assigned employees. Works with staff in manpower planning and management needs. Prepares and manages the Department’s budget. Schedules and coordinates the work of chefs, cooks and other kitchen employees to assure that food preparation is economical and technically correct and within budgeted labor cost goals. Establishes controls to minimize food and supply waste and theft. Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles. Attends food and beverage staff and management meetings. Cooks or directly supervises the cooking of items that require skillful preparation. Evaluates food products to assure that quality standards are consistently attained. Interacts with food and beverage management to assure that food production consistently exceeds the expectations of members and guests. In conjunction with F&B management team, assist in maintaining a high level of service principles in accordance with established standards. Develops policies and procedures to enhance and measure quality; continually updates written policies and procedures to reflect state-of-the-art techniques, equipment and terminology. Ensures that representatives from the kitchen attend service lineups and meetings. Periodically visits dining area when it is open to welcome members. Support safe work habits and a safe working environment at all times. Perform other duties as directed.

Qualification Requirements: Graduation with a Bachelor’s Degree in Culinary Arts or related field or equivalent combination of education and experience. Eight (8) years of experience as a chef cooking specialty cuisines with at least six (6) years in a supervisory capacity. Experience in Chinese cuisine(s) with noodle specialization is preferred. Pre-opening experience is required.
