Job Title: Executive Sous Chef - Western
Job Duties: • To implement and maintain Western Kitchen standards which are cost effective and tailored to meet guest expectation. • To meet the financial targets while achieving the food quality and service objectives. • Lead Western Kitchen Operations for property. • Interact with internal staff and external guests from Western and international countries. • Set and Maintain goals for respective section’s function and activities. • Ensure standards and responsibilities are met. • Work to continually improve guest and employee satisfaction while maximizing the financial performance in all areas of responsibility. • Oversee all food preparation areas and support all areas. • Interview, hire, orient, train, discipline, schedule, manage and develop regular and on call staff members. • Work with respective department heads on departmental financial requirements; monitor and control food and labor costs. • Delegate a prep list to the kitchen staff that provides clear and concise explanations; recipe ingredients, methods, amounts, and times in which projects are to be completed. • Direct and delegate specific tasks to all kitchen staff on event days to ensure an efficient and qualitative service. • Communicate directly with front of house staff in relation to time guidelines, counts and special dietary restriction before execution of service. • Establish and maintain various filing / records / database of business contacts, trace pending items and follow up as appropriate. • Ensure that all supplies are ordered, stocked, and properly stored. This includes all food items, dishes and utensils, cleaning products, cooking supplies, and any other items necessary for the event. • Remain up-to-date on new techniques and trends in order to modify and create new menu items to satisfy customer needs. • Act as a creative lead with the team to further enhance Food & Beverage programs. • Adapt and execute seasonal menus in a qualitative and efficient manner. • Educate and ensure all kitchen staff adheres to the proper handling of products in relation to cooling, heating, storage and sanitation guidelines; oversee sanitation of all kitchen equipment. • Follow established policies regarding hiring, payroll, evaluation, and discipline. • Maintain an orderly, safe, and sanitary workplace. • • Perform other related duties as assigned.

Qualification Requirements: • Minimum of 10 years’ experience in Western kitchen or related professional area. • Must have 5 years or more of Management position experience in a five (5) star hotel environment or well-known property or Michelin Restaurant. • Must have 5 years or above Chef de Cuisine or related position experience in a five (5) star hotel environment or well-known property or Michelin Restaurant. • Secondary school graduate or equivalent working experience. • Excellent product knowledge of Western Kitchen; accurate knife skills; understanding of HACCP standards and guidelines. • Must have Pre-opening experience. • Ability to communicate in English & French, Knowledge of Mandarin, Cantonese, Japanese or Korean is an advantage. • Proficiency in MS Office: Outlook, Word, Excel and PowerPoint. • Able to work on flexible shifts including overnights, weekends and holidays on a rotation basis. • Ability to manage several task simultaneously and maintain high standard of service. • Strong interpersonal skills with the ability to communicate effectively across all levels. • Must be able to Multitask.
