Job Title: Butcher
Job Duties: Cut, trim, or prepare consumer-sized portions of meat for use or sale in retail establishments. Wrap, weigh, label and price cuts of meat. Prepare and place meat cuts and products in display counter, so they will appear attractive and catch the shopper's eye. Prepare special cuts of meat ordered by customers. Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking form. Receive, inspect, and store meat upon delivery, to ensure meat quality. Shape, lace, and tie roasts, using boning knife, skewer, and twine. Estimate requirements and order or requisition meat supplies to maintain inventories. Supervise other butchers or meat cutters. Record quantity of meat received and issued to cooks and/or keep records of meat sales. Negotiate with representatives from supply companies to determine order details. Cuts, trims, bones, ties & grinds meats using butcher’s cutlery and powered equipment such as electric grinder & band saw to portion and prepare meat in cooking form for retail & wholesale sales. Receive, inspect & store meat upon delivery to ensure meat quality. Record quantity of meat received and issued and/or keep records of meat sales. Prepare & place meat cuts and products in display counter so they will appear attractive and catch the shopper’s eye. Prepare special cuts of meat ordered by customers. Wrap, weigh, label and price cuts of meat. Estimate requirements and order or requisition meat supplies to maintain inventories. Clean & sanitize work area. Performs other related duties as assigned.

Qualification Requirements: Must be able to prepare primal cuts of meat into a variety of smaller cuts intended for sale in a retail environment. Prepare meat products, maintain meat department area and perform special order meat product requests. Must have full knowledge and experience of a meat department operations and skills. Ability to work independently. High school graduate and have at least 5 years of experience.
