Job Duties: Plans or participates in planning menus & utilization of food surpluses & leftovers, taking into account probable number of guests, marketing conditions, popularity of various dishes, & recency of menu. Estimate food consumption & purchases or requisitions foodstuffs & kitchen supplies. Reviews menus, analyzes recipes, determines food, labor, & overhead costs, & assigns prices to menu items. Directs food apportionment policy to control costs. Supervises cooking & other kitchen personnel & coordinates their assignments to ensure economical & timely food production, and other related duties as assigned

Qualification Requirements: Employer Preference: at least 2 years experience and knowledgeable in sea food preparation and Japanese dish preferred.
