Job Duties: Er preference: Prepares, seasons, and cooks soups, meats, vegetables, desserts, and other foodstuffs for consumption. Reads menu to estimate food requirements and orders food from supplier or procures food from storage. Adjust thermostat controls to regulate temperature of ovens, broilers, grills, roasters and steam kettles. Measures and mixes ingredients according to recipe, using variety of kitchen utensils and equipment, such as blenders, mixers, grinders, slicers, and tenderizers to prepare soups, salads, gravies, desserts, sauces, and casseroles. Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods. Adds seasoning to foods during mixing or cooking, according to personal judgment and experience. Observes and test foods being cooked by tasting, smelling, and piercing with fork to determine that it is cooked. Carves meats, portions food on serving plates, add gravies, sauces and garnishes servings to fill orders. May supervise other cooks and kitchen employees. May wash, peel, cut, and shred vegetables and fruits to prepare them for use. May butcher chicken, fish and shellfish. May cut, trim, bone meat prior to cooking. Makes the menu planning, costing and works on catering quotations including schedule planning. Other related duties as needed. Onet:# nspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices. # Turn or stir foods to ensure even cooking. # Season and cook food according to recipes or personal judgment and experience. # Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils. # Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment. # Portion, arrange, and garnish food, and serve food to waiters or patrons. # Regulate temperature of ovens, broilers, grills, and roasters. # Substitute for or assist other cooks during emergencies or rush periods. # Bake, roast, broil, and steam meats, fish, vegetables, and other foods. # Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.
