| Job Duties: | •The Sous Chef will supervise, coordinate and assist in the activities of the kitchen staff engaged in proper cleaning, cutting, marinating, seasoning and cooking of foodstuffs. •Maintain programs to ensure high levels of sanitation, hygiene and safety are carried out in all food production areas. •Ensure quality and consistency according to specifications and recipes. •Handle and control all facets of operations under the Executive Chef approval. •Will assist in menu design. •Will co-ordinate and supervise all monthly inventories. •Taste and evaluate food. •Plan menu for staff canteen. •Utilize left over food and ensure proper rotation, labeling and dating. •Requisition food according to menus and planned production. •Supervise dish out area, ensure quality and quantity are according to company/ airline specifications. •Supervise and ensure proper chilling time according to flight schedules. •Performs ongoing training of staff. •Reviews and rates performance of subordinates. •Ensure hygiene standards laid down by the Company, Airlines and the legislations are strictly followed. •Assist subordinate staff in identifying and solving problems. •Supervisory responsibilities also include appraising performance; rewarding and disciplining employees; addressing complaints and solving problems. •Performs other duties as required by the mission of the company.
