| Job Duties: | Responsible for preparing, cooking and garnishing foods required of his Kitchen Section. Must be knowlegable of all or most of Japanese cuisines. Carries out all reasonable duties assigned by Supervisors, Managers and Directress. Cooks foods following established standards and/or standard recipes with or without supervision. Keeps informed about Hotel occupancy, daily/weekly specials and banquet functions. Sets up mise en place daily by cutting, preparing foodstuffs and ingredients as needed. Measures and mixes ingredients in accordance with standard recipes; using hte available utensils and equipment. Discusses and memorizes new items/recipes with supervisor - should keep his/her own record book. Responsible for rotation of fresh and old foodstuffs - cooked and raw - maintains absolute cleanliness of work area, reports malfunction of equipment, shortage of tools immediately to supervisor. Reads and undertstands any event order for banquet functions. Maintains hygiene standards in the Kitchen or assigned area at all times. Anticipate next shift operations' requirements by preparing ahead of time. Maintains neat and tidy well stocked kitchen stations. Maintenance and upkeep of all F&B equipment within the assigned area. Ensures that the hotel's policies and procedures on proper handling and breakage and loss control are met. Assist in maintaining the par stock level of hotel's inventory of equipment. Perform other duties as assigned. |
