| Job Duties: | •Review internal requisitions from all division and withdraw meat from cold storage accordingly. •Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking form and to specifications of division requirements. •Weigh, label and distribute prepared meat to divisions. •Receive, inspect, and store meat upon delivery, to ensure meat quality. •Estimate requirements and order or requisition meat supplies to maintain inventories. •Shape, lace, and tie roasts, using boning knife, skewer, and twine. •Record quantity of meat received and issued to divisions and/or keep records of meat inventory. •Inspect meat cutting equipment, appliances, and tools using and report any malfunctions. •Observe cutting equipment, appliances and tools during usage and report any indication of abnormality. •Clean and sanitize cutting equipment, appliances and tools after each usage. •Monitor working area and activities and keep them sanitized in accordance to standard procedures established for food and employee safety. •Take necessary corrective actions within immediate control and report or recommend other preventive or corrective actions necessitating management attention. |
