| Job Duties: | Must be experienced & skilled in preparing Japanese cuisine including but not limited to sushi, sashimi & tempura. Can prepare all menu items according to quantity menus, must know cutting & preparation techniques for each type of fish used in sushi rolls as well as how to prepare rice, sauces, and seasonal ingredients, must ensure that ingredients are fresh,colorful and always in stock, knives are sharp & clean, all cooking equipment in working order. Maintain kitchen clean , observe safety & sanitary food handling practices as well as other related duties as assigned or required. |
