Job Title: Junior Sous Chef
Job Duties: Job Summary – (Role Summary) Assist Chef de Cuisine in the management of Kitchen Operations in a single food & beverage outlet or a shift, or section of food and beverages operations, including menu planning and costing, organizing special events, developing new dishes, maintain food quality standards and comprehensive product knowledge. Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures. Essential Duties and Responsibilities (Key Activities of the Role) Participates in the planning and costing of menus. Develop and write standard recipes. Develop new dishes and products. Ensure the outstanding culinary technical skills are maintained. Assist with organizing special events and special food promotions. Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly. Maintain a hygienic kitchen. Clean the kitchen and equipment. Maintain personal hygiene. Supervise and training of assigned employees. Works with executive chef in manpower planning and management needs. Works with executive chef in the preparations and management of the department’s budget. Chinese Regional Dishes: Guangdong Dishes: Prepares an extensive range of meat, vegetable, chicken, and seafood dishes, Prepares sauces, condiments, seasonings, and flavoring agents, Prepares braised dishes, Prepares dehydrated products. Sichuan Dishes: Prepares a range of specialty chicken and duck dishes, Prepares a range of specialty seafood dishes, Prepares a range of vegetable dishes, Prepares braised dishes, Prepares hot and cold noodle dishes. Beijing Dishes: Prepares specialty chicken and duck dishes, Prepares specialty seafood dishes, Prepares a range of vegetable dishes using regional cooking principles and specialty food presentation, Prepares braised dishes according to regional style, Prepares noodle dishes. Shanghai Dishes: Prepares specialty menu items using specialized and preserved commodities, Prepares specialty chicken and duck dishes, Prepares specialty seafood dishes, Prepares a range of vegetable dishes, Prepares braised dishes according to regional style, Prepares noodle dishes. Korean Dishes: Prepare extensive range of regional food, including appetizers, soups, curries, sauces, dressings, Prepares regional appetizers, Prepares soups, Prepares regional curries, Prepares regional sauces, dips, and dressings. Japanese Dishes: Prepares and procedures a range of japense food including sunomono, tsukemono aemono, yakimono mushimono, gohanmono, and kaiseki menu items, Prepares and procedures a range of aemono (dressed salads), sunomono (vinegared salads), and tsukemono (pickles), Prepare and produce sashimi, Prepare and produce a range of mushimono (steamed) dishes, Prepare and produce a range of yakimono (grilled dishes). Vietnamese Dishes Prepares extensive range of regional food, including banquet, festive, and specialty menu items, Prepares and procedure a range of salads, Prepare soups and stocks, Prepare chicken, meat, seafood, and vegetables dishes, Prepares regional rice dishes, Prepares regional noodle dishes. Asian Dessert: Produces a range of liquid and solid desserts, Produces and presents a range of steamed sweet rice based desserts, Produces baked desserts. Dim Sum: Produces sweet and savory dim sum, Produces deep fried dim sum, Produces baked dumplings, Produces a range of baked desserts. Buffet Food: Prepares and presents food for buffets, Prepares and presents desserts for buffets, Stores buffet items.

Qualification Requirements: Required Skills – Demonstrated ability to interact with customers and employees, and third parties that reflects highly on the facility, the brand, and the Company. Food service permit or valid health/food handlers card as required by local government policy. Skilled in problem solving and training. Must be dependable and flexible to work nights, weekends, and holidays. Must be able to speak, read, and write in English. Must be able to speak, read, and write in Mandarin. Qualifications – Diploma or Vocational Certificate in Culinary Skills or related field or an equivalent combination of education and experience. Experience – 3 years experience as a chef including at least 1 year in supervisory capacity or an equivalent combination of education and experience in Chinese, Korean, and/or Japanese restaurant.
