| Job Duties: | Nature and Scope of position: To manage the administrative functions of the F&B department the operation of the drink and food preparation/service areas of the Club. Responsibilities: The position of Food and Beverage Manager consists of the management of all Kitchen Staffs, Wait Staffs and Bartenders. To formulate and manage the budget of the F&B Department, control audit of all stock orders, to plan and organized promotions within the department.Achieve Budgeted Financial returns. Maintain the Club according to government licensing requirements and maintain a clean and presentable high standard appearance. Monitor compliance with health and fire regulations regarding food preparation and serving. Monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is prepared and presented in an acceptable manner. Account for all cash for submission to Finance for deposits. Investigate and resolve complaints regarding food quality,service or accommodations. Coordinate assignments of cooking personnel to ensure economical use of food and timely preparation. Coordinate assignments of Bartenders and Wait Staffs to ensure that high standard services are provided to guests and patrons. Essential Requirements: Management of Kitchen, Wait and Bartender Staffs. Training of all staffs under direct supervision. Work costs and sales prices for all Restaurant/Bar items for sale. Approve and audit all stock orders for the Bar and Restaurant. Control and audit all financial areas of the Food and Beverage Department. Ensure all staff adhere to required government regulations in regards to the operation of a Bar and Restaurant. Present menus to patrons and make recommendations to the General Manager. Ensure staff maintains a clean working environment in the Kitchen, Bar and Restaurant. Prepare promotions and relevant advertising for promotion in the Bar and Restaurant. Adhere to all regulations in relation to Anti-Money Laundering filing reports as required. Maintain impeccable dress and grooming standards at all times. Maintain and control all rostered for staffs working in F&B. Secondary Requirements: Check with customers to ensure that they are enjoying their meals and take action to correct any problems. Friendly, hospitable, service oriented personality. Perform other duties as required. |

| Qualification Requirements: | Must have a high school diploma, GED or equivalent with one or two years experience as a Manager in an organization controlling the operation of Kitchens, Bars and Restaurant. Knowledge of principles and processes for providing customer and personal services, which includes customer needs assessments, meeting quality standards for services, and evaluation of customer satisfaction. Knowledge of business and management principles involved in strategic planning, resource allocation, human resources modeling, leadership technique, production methods, and coordination of people and resources. Knowledge of raw materials, production processes, quality control, costs, and other techniques for maximizing the effective manufacture and distribution of goods. Knowledge of principles and method of training, teaching and instruction of individuals and groups, and the measurement of training effects. Knowledge of principles and procedures for personnel recruitment, selection and training. Skills: Service oriented - Actively looking for ways to help people. Coordination - Adjusting actions in relation to other actions. Critical Thinking - Using logic and reasoning to identify the strengths and weaknesses of alternative solutions, conclusions or approaches problems. Speaking - Talking to other to convey information effectively. Management of Personnel Resources - Motivating, developing, and directing people as they work, identifying the best people for the job. Abilities: Oral comprehension, Oral Expression, Problem Sensitivity, Written Comprehension and deductive Reasoning. Preferred an applicant with background experience in a Casino setting environment. |
