| Job Title: | Chef de Partie - Butchers & Live Fish |
| Job Duties: | • Assist Sous Chef to manage the kitchen’s daily operations. • Supervise and check every dish sent from the section to ensure business standards are maintained. • Monitor stockroom storage levels to ensure sufficient supplies. • Monitor the quality of processing and preparation in the kitchen. • Maintain HACCP standards for the storage, and clean and tidy kitchen and utensils. • Continuously improve health and safety standards. • Coach, motivate, counsel and evaluate kitchen staff. • Conduct departmental training and write operating procedures. • Assign workstations to kitchen staff and match manpower to demands. • Test and correct any deviations from service procedures swiftly through on the job training. • Suggest creative ideas to enhance the kitchen’s image and offering. • Interact with department and company team members, management, and contractors professionally and positively. • Attend department and inter-department meetings and share relevant information. • Encourage good relationships, promote team spirit, and ensure effective two-way and multicultural communications. • Adhere to the company policies and procedures and comply with the Code of Conduct. • Remain well-mannered and well-groomed as per department and company standards. • Follow health and safety standards and strive for constant improvement to avoid health and injury hazards. • Participate in the company recycling program and follow a strict discipline to reduce, re-use and recycle wherever possible. • Perform other related duties as assigned. |

| Qualification Requirements: | • Must have 1 - 2 years F&B experience in a 5 star hotel environment or well-known properties’ cold temperature environment. • Excellent product knowledge of fresh foods (meat, fish, seafood), expiry periods, and pricing of supplies; accurate knife skills; understanding of HACCP standards and guidelines. • Secondary school or equivalent working experience. • Ability to communicate in English; Cantonese, Mandarin & French is an advantage. • Excellent leadership and supervisory abilities. • Good communication and interpersonal skills. • Team player who responds quickly to demands and thrives in a high pressure work environment. • Able to work on shifts and be flexible regarding work schedules according to business demand. • Ability to stand for long periods. • Must be able to multi-task. |
