| Job Duties: | • Select and manage beverage requirements and maintain an inventory of popular, high-quality and profitable wines. • Manage the long-range staffing needs of each F&B outlet. • Assist in planning and implementing procedures for special club events and banquet functions. • Purchase, store, and receive international wines for the resort’s cellar. • Review and manage monthly revenue and expenditure records. • Control expenses and research ways to generate more revenue. • Recommend wine and food pairings. • Provide personalized service to media and VIP guests. • Write and implement standard operating procedures and learning guides about wine. • Constantly assess wine and beverage service standards and arrange refresher training to improve team members’ competency levels. • Maintain effective communication with all F&B team members by providing written and verbal translations. • Monitor industry and market trends and recommend adjustments to menus and pricing accordingly. • Suggest creative ideas to the executive management to enhance the resort’s image and wine offering. • Interact with department and company team members, management, and contractors professionally and positively. • Attend division and inter-division meetings and share relevant information. • Encourage good relationships, promote team spirit, and ensure effective two-way and multicultural communications. • Adhere to the company policies and procedures and comply with the Code of Conduct. • Remain well-mannered and well-groomed as per department and company standards. • Follow health and safety standards and strive for constant improvement to avoid health and injury hazards. • Help plan and approve external and internal marketing and sales promotion activities for the food and beverage department. • Participate in the company’s recycling program and follow a strict discipline to reduce, re-use and recycle wherever possible. • Perform other duties as assigned. |

| Qualification Requirements: | • Minimum of 3 years of progressive F&B management experience in large, up-scale, high volume, multi-F&B outlet hotel environment. • Minimum of 2 years of experience in a 5 star(s) hotel or well-known property. • Must have pre-opening experience in hotel industry. • Excellent product knowledge of food and wine pairing. • Diploma holder in Business Administration or Hospitality or relative disciplines. • Ability to communicate in English; knowledge of Cantonese, Mandarin, Japanese and Korean is an advantage. • Ability to operate Microsoft Windows & Office software. • Passionate about wine. • In-depth understanding of wine regions, grapes, vineyards and vintages. • Must have a strong understanding of forecasting, budgeting, scheduling, checkbook management, productivity, inventory controls and beverage cost controls. • Confident and friendly. • Must have a good understanding of wine and beverage trends. • Able to work on flexible shifts including overnight, weekends and holidays on a rotation basis. • Must have refined verbal communication skills. • Must be customer service oriented. • Must be able to multi-task. |
