Job Title: | Assistant Kitchen Manager |
Job Duties: | Assistant Kitchen Manager serves in a support position for other managers in dining establishments like kitchens and catering companies. Must have knowledge of raw materials, production process, quality control, costs, other techniques for maximizing the effective manufacture and distribution of goods and the principles and processes for providing customer and personal services. Monitor food preparation methods portion sizes and garnishing, and presentation of food to ensure that food is prepared and presented in an acceptable manner. Monitor compliance with health and fire regulations regarding food preparation, serving, and building maintenance in lodging and dining facilities. Maintain food and equipment inventories, and keep inventory records. Monitor budgets and payroll records, and review financial transaction to ensure that expenditures are authorized and budgeted. Schedule staff hours and assign duties to ensure economic use of food and timely preparation. Direct and may participate in the preparation, seasoning, and cooking of salads, soups, fish, meats, vegetables, desserts, or other foods. May plan and price menu items, order supplies, and keep records and accounts. Monitor sanitation practices to ensure that employees follow standards and regulations. Check the quality of raw or cooked food products to ensure that standards are met. Estimate amounts and costs of required supplies, such as food and ingredients. Instruct cooks or other workers in the preparation, cooking, garnishing, or presentation of food. Supervise or coordinate activities of cooks or workers engaged in food preparation. Inspect supplies, equipment, or work areas to ensure conformance to established standards. Order or requisition food or other supplies needed to ensure efficient operation. Determine production schedules and staff requirements necessary to ensure timely delivery of services. Check the quantity and quality of received products. Arrange for equipment purchases or repairs. Meet with customers to discuss menus for special occasions, such as weddings, parties, or banquets. Record production or operational data on specified forms. Monitor and update unit price. Make all schedule and control labor hours. Plan schedule of cleaning and make a plan to train new staff. Perform other related duties as assigned by the employer. |

Qualification Requirements: | Associate Degree preferred, Bachelor Degree in Hotel and Restaurant Management is an advantage. Must have minimum 3 months to 2 years experience on a Restaurant setting not on a fast food outlet. Sufficient knowledge on computer to fulfill management functions is a must. Must possess ability in planning, training, directing, controlling and coordinating the activities of all departments to ensure a well organized daily operation. Can handle multi-task work load. Must have valid divers license. Must be able to handle split shift schedule. Must be flexible with work schedule. Must have Food Handlers Certificate. Must be able to work in the U.S. |
